The water resistant handles are made with pakkawood for a premium feel and excellent strength. The rounded shape provides a comfortable fit in your hand and the full-tang design gives it excellent durability and a balanced weight that minimizes fatigue during long-term use.
Each blade is constructed from 8A Stainless Steel and is treated with a special chamfering process which reduces the friction against food and the blade. The edge on the blade after manufacturing is finished with a special grinding process which results in a smoother blade, thus giving the blade a superior cutting edge and requiring less force or power for cutting as the blade has an extremely sharp cutting edge.
This knife is not designed to cut through bones or very thick-skinned vegetables. For this heavier kitchen work, we suggest purchasing the Shun Classic Meat Cleaver (DM0767), or Shun Classic 8” Western Chef’s Knife (DM0766) to add to your collection.

A very good knife
First time buyer of Japanese knives, and I love it! The only thing I have to get use to, is that this knife is a little lighter than what I would like, but that how knives from Japan are designed. European knives are heavier and I am used to these. Other than that, it is a remarkable knife; the shape of the blade is perfect for all sort of work, it is well balanced, and feel good in the hand. The handle could be a little chunkier, but is still fine as is. All in all, at that price range, it is a GREAT knife!
